“Lavender Scones”

2          cups plain flour

1          tbsp. baking powder

2          oz. butter

2          oz. sugar

2          tsp. fresh lavender florets

or 1 tsp. dried culinary lavender, roughly chopped

2/3      cup milk

  1. Set the oven at 425 degrees Fahrenheit. Then thoroughly sift the flour and baking powder together.  Rub the butter into the flour mixture until it resembles breadcrumbs.  Stir in the sugar and lavender, reserving a pinch to sprinkle on the top of the scones before baking them.  Add enough milk to make it a soft sticky dough.  Bind the dough together and then turn it out on to a well-floured surface.
  1. Shape the dough into a round, gently patting down the top to give a 1 inch depth. Using a floured cutter, stamp out 12 scones.  Place on a baking sheet.  Brush the tops with a little milk and sprinkle over the reserved lavender.  Bake for 10-12 minutes until golden.  Serve warm with plum jam and clotted cream.
