Mint Tea
Book – “Juices” by “Elsa Petersen-Schepelern”


1    large bunch of mint

sugar or honey, to taste (optional)

1    tablespoon green tea (optional)

Serves 1-4

  • Wash the mint well, then break it in large handfuls and put into a French press.  Pour over boiling water, let steep for 3-5 minutes, then press the plunger.  Pour into tea glasses, add honey, if using, and a few fresh mint leaves, then serve.  If using green tea, add it at the same time as the mint.
